Marinated Mozzarella Salad

Add this to your party favorites. It's pretty and the flavors are great!!

1 c. ( 4 oz.) part-skim mozzarella cheese, cut into 1/2-in. cubes
2 medium tomatoes, diced
1 medium cucumber, peeled and cubed
1 medium-size green pepper, seeded and chopped
6 radishes, sliced
1/2 c. chopped onion
1/2 c. white wine vinegar
2 T. minced fresh parsley
2 T. vegetable oil
1 T. minced fresh basil
1/4 t. garlic powder
1/4 t. ground white pepper
4 drops of hot sauce

Combine first 6 ingredients in a large shallow dish; toss gently. Set aside.

Combine remaining ingredients; stir well, and pour mixture over vegetables. Toss gently. Cover and marinate in refrigerator 8 hours. Serve using a slotted spoon.

YIELD: 8 servings (87 calories per 1/2 cup serving)

Tis the season for tomatoes and mozzarella...almost:) I picked up some grat tomoatoes at the Holland Farmers market Saturday. Recipe looks great
