Cajun Dirty Rice
1/2 t. salt
1/2 t. paprika
1/4 t. freshly ground black pepper
1/4 t. dry mustard
1/4 t. dried whole basil
1/4 t. dried whole thyme
1 T. margarine
1/2 c. chopped onion
1/2 c. chopped celery
1/2 c. chopped green pepper
1 clove garlic, minced
2/3 c. uncooked long-grain rice
1 1/3 c. water
Combine first 7 ingredients in a small bowl; stir well. Set aside.
Melt margarine in a large saucepan.
Add celery, onion, green pepper, and garlic, and sauté until vegetables are crisp-tender.
Stir in rice, and sauté until lightly browned. Stir in reserved seasoning mixture and water; bring to a boil.
Cover, reduce heat, and simmer 20 minutes or until liquid is absorbed.
YIELD: 6 servings ( 1/2 cup each)
