Cajun Dirty Rice


Dirty Rice
1/2 t. salt
1/2 t. paprika
1/4 t. freshly ground black pepper
1/4 t. dry mustard
1/4 t. dried whole basil
1/4 t. dried whole thyme
1 T. margarine
1/2 c. chopped onion
1/2 c. chopped celery
1/2 c. chopped green pepper
1 clove garlic, minced
2/3 c. uncooked long-grain rice
1 1/3 c. water

Combine first 7 ingredients in a small bowl; stir well.  Set aside.

Melt margarine in a large saucepan.
Add celery, onion, green pepper, and garlic, and sauté until vegetables are crisp-tender.
Stir in rice, and sauté until lightly browned.  Stir in reserved seasoning mixture and water; bring to a boil.
Cover, reduce heat, and simmer 20 minutes or until liquid is absorbed.

YIELD: 6 servings ( 1/2 cup each)

Totally off topic, but I love your no phone sign for the car. Today I was dropping my son off at pre-school and a mom was texting and NOT looking at where she was going in a parking lot filled with children going to school. She had her son in the car...I just wanted to yell, "What are you thinking!?" But of course, she couldn't see me mouthing that to her because she was too busy looking at her phone.
