Peanut Butter Pumpkin Bread

3 c, sugar
1 can (15 oz.) solid packed pumpkin
4 eggs
1 c. vegetable oil
3/4 c. water
2/3 c. peanut butter
3 1/2 c flour
2 t. baking soda
 1 1/2 t. salt
1 t. ground cinnamon
1 t. ground nutmeg

Preheat oven to 350 degrees.
In a mixing bowl, combine the sugar, pumpkin, eggs, oil, water, and peanut butter; beat well.
Combine the flour, baking soda, salt, cinnamon, and nutmeg. Gradually add the pumpkin mixture; mix well.
Pour into two greased 9x5x3 inch loaf pans.
Bake for 60-70 minutes or until toothpick comes out clean.
Cool for 10 minutes before removing from pans.

I can't decide if peanut butter and pumpkin go together...I'm intrigued!

I thought the same thing Becca. But when I tried it I liked it, especially with a little butter on the slice. The peanut butter added moisture ( and protein) and is not an overpowering flavor.
